Ginger Carrot Soup
Ingredients:

1 tbsp olive oil

1 small onion, chopped

4 carrots, peeled and sliced

1 inch fresh ginger, grated

3 cups veggie broth

Salt to taste
Instructions

In a pot, heat olive oil. Add onion and cook until soft (5 mins).

Add carrots, ginger, and broth. Bring to a boil, then simmer for 15–20 mins.

Blend until smooth (in blender or with immersion blender). Add salt to taste.
