Ginger Carrot Soup

Ingredients:

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 4 carrots, peeled and sliced

  • 1 inch fresh ginger, grated

  • 3 cups veggie broth

  • Salt to taste

Instructions

  1. In a pot, heat olive oil. Add onion and cook until soft (5 mins).

  2. Add carrots, ginger, and broth. Bring to a boil, then simmer for 15–20 mins.

  3. Blend until smooth (in blender or with immersion blender). Add salt to taste.
